It’s a cold spring morning, and you’re heading down 9th Avenue. You skipped breakfast, and you’re getting hungry. The new breakfast and lunch place, Biscuit Mike’s, delivers a solution to your problem.
Biscuit Mike’s is a newly opened small cafe on 9th Avenue and Coffman. It specializes in its breakfast sandwiches, made with warm buttermilk biscuits as well as toppings of your choosing.
Since 2020, Biscuit Mike’s was a food truck that would regularly operate throughout Longmont and Lyons. The owner, Mike Simuns, had a goal to open a cafe serving southern comfort food, and was recently able to achieve this and opened his cafe in March of 2026.
Some popular items on their menu are the bacon egg and cheese sandwich, fried chicken and honey sandwich, and coffee. In addition, Biscuit Mike’s also has a Biscuit of the Day, which are buttermilk biscuits with different seasonings and flavors baked into them, and have a different flavor every day.
The bacon and cheese sandwich is a great choice. Between two square-shaped biscuits, you get fresh-cooked bacon and cheddar cheese, and if you want, you can have egg as well. The buttermilk biscuits are compact, but fluffy and have a distinct, bready taste that makes it separate from other places. The bacon, a great balance between chewy and crispy, is freshly cooked and its taste amazingly blends with the taste of the biscuits. The cheddar cheese melts well on top of the bacon, further enhancing the flavor.
The sandwich has an unusual temperature, a little less warm than others. Although it may sound like a bad thing, it seems almost perfect for their style. The bready biscuit flavor seems to pop at the temperature it is, and the bacon gives you a satisfying pocket of heat in the middle.
The ambience of the place is nice as well. It’s a secluded, quiet place, good for studying or talking with friends. There’s not a long wait for your food to be ready, and the friendly staff can help with any worry you might have.
Located at 900 Coffman Street, Biscuit Mike’s is open most mornings until 1:30 P.M.

![Hosting the SCLA Casptone Mentor Dinner outside allowed for more attendees on September 27, 2021 at Silver Creek. This event would’ve usually been held inside. According to Lauren Kohn, a SCLA 12 teacher, “If we have a higher number of people, as long as we can host the event outside, then that seems to be keeping every[one] safe”.](https://schsnews.org/wp-content/uploads/2021/11/sxMAIGbSYGodZkqmrvTi5YWcJ1ssWA08ApkeMLpp-900x675.jpeg)
